What cut of beef is used in Yoshinoya's beef bowls?

I'd like to prepare an authentic gyudon to impress my friends, I know the ingredients (onions, ginger etc hey it's a simple dish actually), but am never sure what cut of beef they used to create that chewy / tasty result.
